Tequila is produced from the juice of the the agave plant mixedwith previously fermented agave juice (pulque), fermented for abouttwo and a half days. Then the mix is double distilled, producing aclear white tequila. Gold tequila is aged on oak casks for up to fouryears.
Mezcal is produced more or less the same way as Tequila, but doesnot come from the designated tequila area of Mexico.
